Make the most of your holiday weekend by joining Diane for a culinary intensive in her Santa Fe kitchen!
Holiday weekend small group intensives focus on the culinary aspects of the Conscious Gourmet Core Program. Whether you’re a seasoned cook or new to whole foods cuisine, you’ll be inspired to hone your culinary skills and think about the food you eat in a whole new way.
The program immerses you in the hands-on preparation of health supportive full meal menus from soup to dessert. You will become intimately familiar with culinary techniques for preparing grains, beans, fish, vegetables, raw and cooked greens; and how to expand upon these techniques to create simple yet extraordinary seasonal favorites. We use the highest quality oils, natural condiments, fresh herbs and spices, whole grain flours and unrefined sweeteners—all organic and free of dairy, wheat and refined sugar.
Return home with knowledge, confidence and skills for preparing delicious mostly vegetarian meals (one menu includes both a fish and bean protein) with a collection of techniques and healthy recipes to serve to your family and friends.

Our program begins on Friday evening at 6:00 p.m. (please have dinner before arriving) with an introduction to Conscious Gourmet theory and our knife skills class. On Saturday and Sunday we’ll begin at 8:30 a.m. with a breakfast buffet.
After reviewing our recipes and ingredients, we’ll create a master plan or map to guide you through our menu’s timely preparation. Then we will head for the kitchen where you’ll begin cooking with Diane’s expert guidance. Following each cooking class we will feast on the gourmet meal you’ve prepared to experience the satisfying results. We will complete at approximately 3:00 p.m. Sunday evening includes an optional group dinner at one of Santa Fe’s fine SW restaurants.
On Monday class begins at 8:30 a.m., followed by our farewell meal and completing at approximately 1:00 p.m.
- $250 per person non-refundable deposit payable by check or PayPal. The balance is due 30 days before the class start date. Enrollments made less than 30 days in advance of the start date must be paid in full at time of registration. Class size is limited to ensure the ultimate learning experience.

Additional tours or services are available at the participant’s option and expense. If you choose to participate in activities outside of the group during class time hours, no reduction, allowances or substitutions will be made.

Numerous airlines fly into the Albuquerque Airport, a one-hour drive to the center Plaza of Santa Fe. The Santa Fe Municipal Airport is serviced by both United and American Airlines and is a 20 minute drive from the Plaza. Shuttle service and car rental is available at either airport. The Conscious Gourmet is located 20 minutes south of the Santa Fe Plaza, 45 minutes from the Albuquerque airport or 15 minutes from the Santa Fe Municipal Airport. Ask about our new Tucson location!
